Lemon Cut-Out Cookies
 
 

1 cup butter 1 cup granulated sugar  3 eggs 2½ teaspoons baking powder  ¼ cup lemon rind Flour sufficient to roll dough  Cream the shortening until light, add sugar, then beaten eggs and lemon juice and rind. Combine baking powder with a small amount of flour, then continue adding flour until the dough can be turned out on the board and rolled thin. Cut with fancy cookie cutters and decorate with colored sugar if desired.
