Ice Cream Sandwiches
| 1 pkg plain peanut butter or chocolate
cookies
1 pint of ice cream (your favorite flavor) 1 small package mini chocolate chips Let the ice cream soften for a few minutes at room temperature while you gather the other ingredients and a large cookie sheet. Pour the package of chocolate chips in to a shallow bowl or plate. For each ice cream sandwich, press 1 spoonful of ice cream between two cookies. Carefully turn the ice cream sandwich on
its side and roll through the chocolate chips. They should stick to the
ice cream. Place on the large cookie sheet and freeze until firm.
