| 2 c. sugar
1 c. butter, softened 4 eggs 4 c. flour 1 c. mashed banana 2 tsp. baking powder 1 tsp. soda ¾ tsp. salt 1 - 20 oz. can crushed pineapple 1 c. flaked coconut ½ c. chopped pecans In a bowl, beat sugar gradually into butter with mixer until light and fluffy. Add eggs, beating well. Stir in banana. Blend in four dry ingredients: flour, baking powder, soda and salt - and mix until smooth. Fold in pineapple and coconut. Pour into two greased and floured 5x9 inch
loaf pans. Bake at 350º for one hour or until bread tests done. 24
