| 1 bag miniature marshmallows
1 -15 oz. can crushed pineapple, drained, juice reserved 1 jar maraschino cherries, halved, drained, juice reserved 1 pint heavy whipping cream 1 cup walnuts, coarsely chopped 2 cups cooked white rice (slightly undercooked, not well done), chilled ¼ cup powdered sugar, or to taste Using large bowl with cover, mix together all ingredients except whipping cream and sugar, In another large bowl, using a hand mixer, whip the cream, adding sugar as you go. Taste frequently so cream does not become too sweet. After the cream is whipped, fold it in with the other ingredients and mix well. Add a few drops of the pineapple and cherry juice for taste but do not make the mixture to wet. Chill mixture 2 hours before serving. It keeps well for about 3 days, if it separates just add a dash of the powdered sugar and whip up by hand. submitted by Robin H.
