Hot Crab Meat Canapés
 
3½ tablespoons mayonnaise
11/3 cups (6½ -ounces can) crab meat, drained
1 tablespoon prepared mustard 
1 tablespoon lemon juice
5 slices white bread, crusts removed
¼ teaspoon salt 
Softened butter or margarine
1/8 teaspoon freshly ground black pepper 
¼ cup shredded Parmesan cheese
1 egg yolk, well beaten 

Combine mayonnaise, mustard, lemon juice, salt, and pepper; blend in the egg yolk. Lightly mix in the crab meat.

Toast bread on one side; cut each slice into four strips; spread untoasted sides with butter. Spread crab meat mixture on each bread finger; sprinkle about ½ teaspoon cheese over top of each; arrange on baking sheet.

Broil about 3 inches from source of heat 4 to 5 minutes. Serve hot.
