Herbed Roast Beef 2
 
2 - 3 pound round rump roast or tenderloin 
1 T fresh ground pepper 
1 t salt 
½ t dried marjoram 
1 t dried thyme 
3 t fresh parsley, chopped 
1 T fresh tarragon, chopped 

Combine spices and mix well. Cover roast beef with spices and roast at 325º F. for 1½ to 2 hours depending on the size and the desired doneness. If you are using a meat thermometer, it should reach 155º F. for medium rare, 170º F. for well-done. Let roast stand for 10 minutes before slicing. Cut into thin slices.
