Herbed
Roast Beef
| Up to a 6 pound beef roast, any cut
2 teaspoons garlic salt 2 teaspoons coarse ground black pepper 2 tablespoons dried thyme 2 teaspoons dried rosemary 2 teaspoons dried sage 6 or 7 slices bacon Combine all herbs and mix well. Dump on
a large cookie sheet. Roll the roast in the herbs. Coat all sides thoroughly.
Place bacon slices across top of roast and bake at 325° F. for approximately
20 minutes per pound. Use a meat thermometer to check for doneness toward
the end of cooking time. Beef will be slightly pink at 130°.
