Honey Orange Turkey
 
1 pound turkey cutlets
½ teaspoon salt
¼ teaspoon pepper
2 tablespoons cornstarch
½ cup orange juice
2 tablespoons honey
1 tablespoon soy sauce, Tamari
½ teaspoon ground ginger
2 tablespoons peanut oil
1 tablespoon peanut oil

Rinse and dry cutlets. Cut into quarters. Place on waxed paper and sprinkle with salt and pepper. Dust with cornstarch. combine orange juice, honey, soy sauce and ginger. Stir until blended. Heat wok 1 minutes and add oil and heat 30 seconds. Add butter and turkey. Stir fry until brown. Remove. Add remaining cornstarch and mix. Add juice and heat to boiling, stirring. Boil 1 minute and pour over turkey. Serve over rice.
