Honey Orange Duck
 
2 large or 4 small ducks
2 oranges, peeled and sliced thin
1 cup honey
½ cup lemon juice
1 tablespoon brandy
½ teaspoon powdered ginger
½ teaspoon salt
Salt and pepper
1 stick butter or margarine
¼ cup brown sugar
2 teaspoon orange peel, grated
1 tablespoon prepared mustard
½ teaspoon pepper

Dry ducks inside and out; sprinkle cavity with salt and pepper. Divide sliced oranges and fill each cavity. Place breast down in roaster. Coat liberally with butter. Mix remaining ingredients and pour over ducks. Cover and roast at 325° F. for 1 hour. Turn ducks, breast side up, and baste with honey mixture. Cover and roast 30 minutes more. Remove cover. Baste again and roast 30 minutes more. Serve with pan juices poured over.
