Honey-Apricot Pie
 
 
2 cups dried apricots
3 cups water
1/3 cup honey 
1/3 cup sugar
1 tablespoon plain gelatin
2 tablespoons cold water
1 cup heavy cream, whipped 
¼ teaspoon salt
4 drops almond flavoring
1 baked pie shell

Cover apricots with water and cook gently for 30 minutes. Five minutes before removing from heat, add honey and sugar. Drain and press apricots through sieve. Sprinkle gelatin over cold water and add to apricot pulp; reheat to thoroughly dissolve gelatin. Chill. Fold in whipped cream, salt and flavoring. Pour into pie shell and chill before serving.
