Hunter's Style Baked Duck
 
1 duck, thoroughly cleaned 
¼ cup lemon juice 
¼ cup Worcestershire sauce 
1 tart apple 
1 onion, diced 
salt and pepper 

Blend lemon juice and Worcestershire sauce and baste the duck thoroughly inside and out. Sprinkle with salt and pepper, stuff with equal parts of diced onion and tart apple. Place the duck on a rack in a baking dish and bake in a preheated oven at 575° F. For small ducks allow 18 to 20 minutes, for those of medium size 20 to 23 minutes, and for large ducks 25 minutes. The juice and residue in the bottom of baking dish are delicious spooned over mashed potatoes.
