Hummingbird
Cake
| 3 c. flour
2 c. sugar 1 tsp. soda 1 tsp. salt 1 tsp. cinnamon 2 c. mashed bananas 1½ c. oil 3 large eggs 8 oz. crushed pineapple (packed in own juice) 1 c. chopped pecans ½ tsp. vanilla 1 small can coconut Sift flour, sugar, soda, salt and cinnamon
together; do not use a mixer. Mix well, add bananas and oil. Beat eggs
and add to mixture. Gently stir in pineapple. Add nuts, coconut and vanilla;
mix well. Pour into greased and floured tube or bundt pan. Bake at 350º
for 1 hour and 20 minutes.
