Hollandaise
Sauce
| 1/4 lb. butter
2 egg yolks 1 T lemon juice |
1/4 c. boiling water
1/4 tsp. salt |
| Separate butter into 3 portions. Put one into pan with yolks and lemon juice. Stir constantly till butter melts - add another part butter then another. Add water and salt. |
