Heavenly Biscuits
These biscuits are also sometimes called
Angel Biscuits. They are very similar to the kind you
can buy in rolls from the dairy section
of the grocery store. They will keep in the refrigerator, in
a plastic bag, for 3-6 weeks. I think
it works best, however, if you allow the cut dough to warm for
15 minutes before baking.
| 1 T yeast
5 T warm water 2 c. warmed buttermilk 5 c. flour 5 tsp. baking powder |
1 tsp. salt
1/2 tsp. baking soda 3 T sugar 3/4 c. butter |
| Warm buttermilk in a saucepan. Dissolve
yeast in water and add to warmed buttermilk. Sift together dry ingredients.
Cut in butter. Add yeast mixture and mix thoroughly.
Knead lightly on a floured surface and roll out 1/2 inch thick. Cut with a biscuit cutter and bake on a greased cookie sheet at 450o for 10 minutes until lightly browned. Alternatively, you can place balls of dough in muffin tins and bake for the same length of time. |
