Baked Haddock in Cheese Sauce
 
 
2 T butter or margarine
2 T flour
1 t salt
Dash of pepper
1 c milk
1 c grated cheddar cheese
1½ pounds haddock fillets or other white fish

Melt the butter in a saucepan, stir in flour, ½ teaspoon salt and pepper. Add milk gradually, stirring over low heat until thickened. Add cheese. Arrange fish in shallow baking dish or pan, sprinkle with remaining ½ teaspoon salt and then cover with the cheese sauce. Bake in 350° oven for 25 minutes, or until a golden brown.
