Grandma's Salmon Patties
 
2 c salmon, boned
2 medium eggs, divided
1 c soft bread crumbs
½ c milk
1 T lemon juice
1/8 t pepper
½ t salt
saltine cracker crumbs
paprika 

Combine salmon, 1 egg, bread crumbs, milk, lemon juice, salt and pepper together in a bowl. Mix well (until salmon mixture can be molded). Let stand in refrigerator for 15 minutes. Remove from refrigerator and form into patties.

Dip patties into beaten egg and then into crushed saltine cracker crumbs. Fry in hot oil until browned. Sprinkle with paprika if desired and serve with lemon wedges.
