Griddle Cakes
 
 

2 cups sifted flour 4 teaspoons baking powder  ¾ teaspoon salt  1 egg, well beaten  1½ cups milk ¼ cup melted shortening Sift dry ingredients. Combine beaten egg, milk and melted shortening and turn into dry ingredients, stirring until absorbed. Drop by spoonfulls on hot greased griddle,  turning when cakes puff and bubble.
