Goose with Baked Apples
 
1 Canada goose 
2½ quarts bread crumbs 
2 onions, chopped 
½ cup red wine 
1 tablespoon sage 
2 tablespoons butter 
8 apples 
¼ cup brown sugar 
1 cup cooked and mashed sweet potatoes 
salt and pepper 
2 eggs 

Season goose inside and out with salt and pepper. Peel, cook and mash sweet potatoes. Mix butter, sage, onions, eggs and bread crumbs. Place bird in roaster. Place mixture inside or next to bird. Pour wine over bird. Cook at 350° F. for 2 to 3 hours. After 1½ hours of cooking, place cored and peeled apples, sprinkled with brown sugar and stuffed with sweet potatoes around bird. Continue cooking with lid on. Baste bird frequently.
