Glazed
Roast Ham
| 8 to10 pound whole smoked ham
Glaze of your choice Heat oven to 325° F. Place ham on a rack in a shallow roasting pan. Roast for about 2 hours, and remove from oven. Cut off rind (if any) and score fat. Insert a whole clove in the center of each cross of the scoring. Spread with one of the glazes below and return to the oven. Continue roasting for about 1 hour, or until internal temperature reaches 160° F. on a meat thermometer. Baste frequently. Apricot: Combine ¾ cup apricot jam, ¾ cup honey and 2 tablespoons lemon juice or cider vinegar. Spread over ham. Brown Sugar: In a saucepan, combine 1 cup packed brown sugar and 2/3 cup light corn syrup, fruit juice or ginger ale. Place over medium heat and stir until sugar is dissolved. Spread over ham. Cider: Combine ¾ cup packed brown sugar, ½ teaspoon dry mustard and 2 tablespoons maple syrup. Spread over ham. Occasionally baste ham with ¾ cup apple cider. Jam or Marmalade: In a small saucepan, mix 1 cup elderberry jam or orange marmalade with 1/3 cup hot water until jam just melts. Spread over ham. Mustard: In a small bowl, 1 cup packed brown sugar, 1 tablespoon flour and 1 teaspoon dry mustard. Stir in 2 tablespoons cider vinegar. Mixture should be like a smooth paste. Spread over ham. Pineapple: In a saucepan, melt ½
stick butter. Mix in 1 cup brown sugar and a 15 ounce can crushed pineapple.
Bring to a boil and continue cooking, stirring frequently, for about 5
minutes. Spread over ham.
