Fudge Supreme
 
1 cup milk
3 cups firmly packed brown sugar
½ cup butter
½ ounce unsweetened chocolate, chopped
¼ cup heavy cream
1 teaspoon vanilla
1 cup chopped walnuts
dash salt

Combine the milk, brown sugar, butter and salt in a heavy 3 quart saucepan. Place over low heat and stir until sugar is dissolved. Increase heat and bring to boiling. Using a candy thermometer, heat to 240° F. (firm ball stage). Remove from heat. Add chocolate and beat vigorously about 3 minutes. Add cream gradually while continuing to beat, then beat in vanilla and walnut until mixture has stiffened. Quickly turn into a buttered square pan and spread evenly. Cool completely and cut into squares.
