Molasses Fritos Pie (or Mock Pecan Pie)
 
 
3 eggs, beaten
¾ cup unsulphured molasses
1 teaspoon vanilla
¾ cup light corn syrup
2 tablespoons butter or margarine, melted
1 tablespoon flour
2/3 cup crushed corn chips
Pastry for one crust pie

Combine beaten eggs, molasses, corny syrup, vanilla and melted butter. Mix flour with crushed corn chips. Add to liquid mixture. Pour into unbaked pastry and bake at 450° F. for 10 minutes, then reduce heat to 350° F., and continue baking until filling is firm or inserted knife comes out clean – about 35 minutes.
