Baked Fish in Tomato Sauce
 
 
2 T onion, minced
sliver of garlic
3 or 4 T olive oil
1½  cups canned tomatoes
salt and pepper to taste
1 bay leaf 
2 pounds fish fillets

Heat oil over medium low heat and sauté onion and garlic for 3 to 4 minutes. Raise the heat to medium; add tomatoes, bay leaf and season to taste. Simmer for about 20 minutes.

Arrange fish in shallow baking pan, pour sauce over it, cover and bake at 325° for about 20 minutes, depending on the thickness of the fish. Remove the cover during the last 5 minutes of baking to glaze the fish.
