Finnish Oven Pancake
 
 
5 large eggs
1 T sugar
½ tsp. salt
2 ½ c. milk
1 c. small curd cottage cheese
1 c. all purpose flour 
1 tsp. baking powder 
½ c. butter

Place 9 x 13-inch pan in the oven while preheating to 425°.  In a large bowl of an electric mixer, beat eggs, sugar and salt, together until thick and about triple in volume. Add milk, cottage cheese, flour and baking powder, beat until well mixed.  Add butter to the hot pan in the oven; when butter is melted, swirl it around to coat bottom of pan.  Pour batter into pan.  Bake until well browned and puffed high around 
sides, about 25 minutes.  Remove from oven cut into squares.  Serve with fresh fruit, powdered sugar, syrup, sour cream and jelly as topping for individual servings. Serves 6-8
