Feathery White Cake
 
 
2/3 cup shortening
2 cups sugar
1 teaspoon vanilla extract
3 cups flour
¼ teaspoon salt
2 teaspoons baking powder
1 cup water
4 stiffly beaten egg whites
1 teaspoon baking powder

Thoroughly cream shortening and sugar, add flavoring extract. Add flour sifted with salt and baking powder, alternately with water, beating well after each addition, Fold in egg whites which were beaten with remaining baking powder. Bake in two 9-inch pans in moderate oven (350° F.) for thirty minutes. Frost with seven-minute icing or uncooked frosting, adding coconut if desired.
