Easy Stuffed Duck
 
3 to 4 pounds duck 
1 whole lemon 
2 cloves garlic 

Rice Stuffing
1 cup rice 
2 cup water 
3 bouillon cubes 
½ cup chopped onion 
½ cup chopped mushrooms 

In a saucepan, combine rice, water, bouillon cubes, onions and mushrooms. Bring to boil and simmer for 15 minutes. Stuff duck with rice mixture. Season all sides of duck with salt and pepper. Squeeze lemon over and inside duck. Place garlic under skin. Wrap in foil and bake at 350° F. for 1 hour. Uncover and bake additional 15 minutes to brown.
