I make these caramels every Christmas, and they are always a big hit!

Caramels
| 1 cup butter or margarine
1 pound (2 ¼ c.) packed brown sugar 1 cup white corn syrup 1 can (15 oz.) sweetened condensed milk dash of salt 1 teaspoon vanilla. In a large saucepan, mix butter, brown sugar, corn syrup, salt and sweetened condensed milk. Heat to firm ball stage (245°). Stir in vanilla and quickly pour into prepared buttered pan. Let cool part way. (Cool enough to handle and keep its shape.) Turn out of pan, cut with buttered kitchen shears into small squares. Wrap in wax paper or plastic wrap. The key to success with these caramels is to reach firm ball. Most candy thermometers are very inaccurate, so test the candy by dripping some into a cup of ice water.
