Buttermilk Pancakes
| 3 cups buttermilk
2 eggs 1½ cups flour 1 teaspoon soda 1 teaspoon baking powder 1 teaspoon salt Combine all ingredients in a mixing bowl
and stir until well blended. Pour batter in uniform amounts (about 1-2
tablespoons for silver dollars, ¼ cup for slightly larger pancakes)
onto a hot, greased griddle. When cakes are full of bubbles, turn with
a pancake turner and brown on other side. Turn only once. Serve hot.
