Escalloped Tuna Fish And Toast
 
 
1 can tuna fish, flaked
¼ cup grated American (or cheddar) cheese 
4 tablespoons butter or margarine 
2 cups milk
½ teaspoon salt
2 tablespoons onion, minced
2 tablespoons green pepper minced 
½ cup stuffed olives, sliced 
2 cups toasted bread cubes 

Buttered bread crumbs for top. In a small saucepan, over medium heat, make a white sauce by melting butter, adding the flour and stirring in the milk. Stir until the sauce thickens. Add cheese and blend. Add tuna fish, olives, minced onion and green pepper. Place a layer of toasted bread cubes in bottom of greased casserole and pour half the tuna fish mixture over cubes. Spread another layer of cubes over creamed mixture and repeat. Top with buttered bread crumbs, sprinkle with grated cheese if desired, and bake in a moderate oven (350° F.) for 20 minutes.
