Vegetable Cutlets
| 3 or 4 eggs, beaten
3 cups mixed cooked vegetables 2/3 cup uncooked oatmeal 1 tablespoon chopped onion 1 teaspoon salt Pepper 2 tablespoons butter To the beaten eggs, add the vegetables,
oatmeal, onion, salt and pepper. Drop by spoonfuls on greased frying pan
and brown on both sides.
