Eggs
in a Frame
| Cut out center of a slice of bread with
a biscuit or cookie cutter (I like heart shapes). Butter bread generously
on both sides. Brown bread “frames” on one side in a moderately hot frying
pan. Turn over. Drop 1 egg in center of bread. Cook slowly until egg white
is set. Cover pan until white starts to set. Sprinkle lightly with salt.
Lift out carefully and serve.
Depending on the shape, I also brown the
cut out and serve it on the side or sticking out of the egg.
