Eggs
and Peas Au Gratin
| 4 hard boiled eggs, sliced
1½ cups cooked peas 2 tablespoons shortening ½ teaspoon salt 1/8 teaspoon pepper 2 tablespoons minced onion 1 tablespoon chopped parsley 2 tablespoons chopped pimiento ½ teaspoon celery salt 2 tablespoons flour 2 cups milk 1 cup grated cheese 1½ cups dry broad crumbs Melt shortening in a saucepan. Blend in
pepper, onion, parsley, pimiento, salt and flour. Add milk and cook until
thick, stirring constantly. Add grated cheese and stir until it melts into
white sauce; add peas. Put a layer of dry bread crumbs buttered casserole,
then add alternate layers of cheese sauce, sliced eggs and bread crumbs.
Bake in a moderate oven (375° F.) for 20 minutes.
