Eggs
and Green Beans Au Gratin
| 6 hard boiled eggs
2 cups cooked or canned green beans Salt and pepper to taste 6 tablespoons butter 1 tablespoon minced onion 6 tablespoons flour 3 cups milk ½ cup fine bread crumbs ½ cup grated cheese Melt butter in saucepan, add onion and
cook until yellow. Add flour and blend. Add milk and cook and stir over
moderate heat until smooth and thickened. Season with salt and pepper to
taste. Butter a shallow baking dish and arrange alternate layers of sliced
eggs, beans and sauce, using sauce for top layer. Sprinkle with a mixture
of the crumbs and cheese and bake in a moderate oven, 350° F., for
about 25 to 30 minutes, or until mixture bubbles and crumbs are lightly
browned.
