| 1/2 lb. ham, finely diced
2 onions, chopped 1 green pepper, chopped |
8 eggs
8 slices bread 1 T butter salt and pepper |
| Melt butter in a skillet over medium heat. Add onions, pepper, and ham and fry till the ham is crisp. Add eggs and seasonings and stir. Cook till lightly browned on bottom and eggs are completely done on top. Cut into 4 wedges and serve between slices of buttered bread. |
