Layer Bars
| ½ cup shortening
1 cup brown sugar 1 ½ cups flour |
½ tsp. salt
1 tsp. soda 1 ¾ cups quick cooking oatmeal |
| Date Filling:
1 lb. dates 1 cup sugar |
1 cup water 1 tsp. lemon juice |
| Thoroughly cream shortening and sugar,
add sifted dry ingredients and oatmeal. Mix until crumbly.
Firmly pat one-half of mixture in wax paper lined 9 x l3-inch pan.
Cook dates, pitted and cut, with sugar and water to the consistency of jam. Add lemon juice. Spread with date filling, add remaining crumbs and pat smooth. Bake at 350o for 30 minutes. Cut in bars or squares. Makes 20. |
