Fish
| 2 pounds fresh fish
3 cups water 4 tablespoons butter or margarine 1 tablespoon green pepper, chopped 1 small onion, chopped ½ cup celery, chopped 3 tablespoons flour 1 teaspoon curry powder 3 drops Tabasco sauce Salt, to taste 2 tablespoons chopped parsley Simmer the fish for about 10 minutes in 3 cups of water, then drain, reserving 2 cups of water. Melt butter and cook the green pepper, onion and celery a few minutes. Add flour and fish water, if necessary add enough water to bring the liquid to 2 cups. Cook for 3 or 4 minutes, add the seasonings, and stir constantly. Remove the skin and from the cooked fish, arrange on a hot platter with a border of cooked rice. Pour the sauce over the fish, and sprinkle the parsley on top. |
