Turkey
| 1 1/3 cups Kosher salt
½ cup sugar 2 tablespoons sugar 2 whole bay leaves 1 tablespoon thyme 7 whole cloves ½ tablespoon allspice berries, crushed ½ teaspoon juniper berries, crushed 10 to14 pound turkey In a very large stockpot combine all ingredients and 2 gallons of water. Bring to a rolling boil and remove from heat and cool to room temp. Add turkey breast side done and cover and refrigerate overnight. In the morning, drain turkey and pat dry.
Cook using your favorite method.
Turkey may be stuffed normally, if desired.
