Cheese Cake
| 1 cup cake flour
1 teaspoon baking powder ¼ teaspoon salt ½ cup sugar ½ cup butter 1 egg, slightly beaten Combine all ingredients like for a pie crust, using egg for liquid. Line fairly deep baking dish with this pastry, and add the following filling: Filling
Sieve cheese twice. Add sugar, egg yolks,
flour, nutmeg, butter, lemon rind and lemon juice. Fold in stiffly beaten
egg whites and cream. Pour into crust. Bake in a hot oven, 425° F.,
for 5 minutes, then reduce heat to 325° F., and bake until filling
is firm (probably about an hour).
