Creamy Eggnog
 
6 egg yolks 
½ cup sugar 
½ t ground nutmeg 
2 cups milk 
1 cup half & half (or light cream)
1 T vanilla 
1 pint premium vanilla ice cream 

Whisk together egg yolks, sugar, and nutmeg in large bowl. In medium saucepan over a medium heat, heat milk until it steams. Pour some of this milk over egg mixture to and whisk. This prevents the eggs from scrambling. Now pour this mixture into saucepan with the rest of your milk and cook, whisking constantly, until it thickens slightly. Remove from heat and stir in the half & half and vanilla, then pour mixture through a strainer into a clean bowl. Add ice cream and stir until melted. Cover and chill at least 1 hour, then stir before serving and garnish with nutmeg.
