Creole Rice & Turkey
 
1 pound turkey breast
½ teaspoon thyme, ground
1 green pepper, cut in chunks
½ teaspoon garlic powder
2 celery stalks, cut in slices
¼ teaspoon black pepper
1 large onion, chopped
¼ teaspoon paprika
2 tomatoes, cut in½ inch pieces
1/8 teaspoon cayenne
1 can tomato sauce (15-oz.)
1½ cup minute rice

Cut turkey into eight ¼ inch slices; set aside. Combine remaining ingredients, except rice, in skillet over medium heat. Bring to boil; turn down heat. Cover. Simmer 10 minutes. Increase heat and bring to a boil again. Stir in rice and top with turkey. Turn down heat.. Simmer 8 minutes more.
