Cottage Cheese Pie
 
 
2/3 cup milk
½ cup sugar
2 tablespoons flour
2 egg yolks, beaten
1 cup cottage cheese
2 tablespoons butter
1 lemon, juice and grated rind
Baked pastry shell

Heat milk and add sugar and flour which have been mixed together. Stir and cook until thick. Add egg yolks and cook a few minutes longer. Remove from heat. Add cheese, butter, lemon juice and rind. Pour in baked pastry shell. Top with meringue made by beating 2 egg whites until stiff, and adding 4 tablespoons sugar gradually. Brown in a 325° F. oven, about 15 minutes.
