Cocoa Walnut Fudge
 
2 cups sugar
6 tablespoons cocoa
¾ cup cold milk
½ cup butter
1 teaspoon vanilla
1 cup walnuts, chopped

Combine sugar, cocoa and milk in a saucepan and stir until sugar dissolves. Add butter and place pan over medium heat. Cook without stirring to 234° F. (soft ball stage).

Cool to 110° F. Add extract and beat until almost creamy. Stir in walnuts; turn into a buttered square pan and spread evenly. Cool completely and cut into squares.
