Cinnamon
Spiced Nuts
| 2 cups mixed whole nuts
1 cup sugar 1/3 cup water 2½ teaspoons cinnamon dash of salt If nuts are raw, spread in a large shallow baking pan and heat in a 275° F. oven for 15 to 20 minutes, or until they are lightly browned, stirring occasionally. While the nuts are browning, combine sugar,
water, cinnamon and salt. In a heavy saucepan. Stir over low heat until
sugar dissolves. Increase heat and bring to a boil. Cook without stirring
until syrup reaches 296° F. (soft crack stage). Remove from heat and
place pan over another pan of hot water. Dip a few nuts at a time into
syrup, evenly coating each nut. Do not stir syrup. Using a fork, place
nuts on a buttered cookie sheet or aluminum foil. When cool, place in a
covered container.
