Cheese
Fondue
| 1½ cups grated cheese
2 cups milk 1 cup fine dry bread crumbs 1½ tablespoons butter 4 eggs 1 teaspoon salt 1/8 teaspoon paprika Separate the eggs. Beat the eggs whites
until stiff and beat the yolks separately. Heat the milk, bread crumbs
and butter in a double boiler. Add the grated cheese to the hot mixture
and stir until the cheese has melted. Add well beaten egg yolks, paprika
and salt, and fold in stiffly beaten egg whites. Pour into a greased baking
dish set in a pan of hot water. Bake in moderate oven (350° F.) for
1 hour or until inserted knife comes out clean. Serve immediately.
