Chicken Gumbo
 
 
1 chicken
1 quart of tomatoes, canned or fresh
1 large onion chopped
¾ pound cured ham 
1 quart sliced okra
Salt to taste
Dash of cayenne

Cut chicken into pieces for serving. Simmer in lightly salted water until tender¾about 3 or 4 hours.  When the chicken is about half done, skim off fat and add tomatoes and onion. Dice the ham and brown in small amount of oil or skimmed chicken fat, then add to pot. Continue to simmer until both meats are tender and sauce has a fairly thick consistency.  Add salt to taste, and a dash of cayenne.  Serve with flaky cooked rice.
