Chicken Dijon
 
 
4 chicken breasts, boned and skinned
½ cup mayonnaise
2 tablespoons Dijon-style mustard
1 cup grated Swiss cheese

Place chicken breast in single layer of a 9" square or 9"x13" baking pan sprayed with nonstick spray. In a small bowl, stir mayonnaise and mustard until blended; spread over chicken. Top with cheese.

Cover loosely with aluminum foil and bake in 400°  F. oven for 45 minutes. Remove foil and break 10 minutes more until cheese is browned and chicken is thoroughly cooked.

(Also good with a bit of horseradish added to the mayo-mustard mix; and with sliced black olives sprinkled over the cheese before cooking.)
