Chocolate Mint Wafers
 
 
2/3 cup shortening
½ teaspoon salt
½ teaspoon soda
¾ cup cocoa
1 cup sugar
1 egg, well beaten
2 cups sifted flour
1 teaspoon baking powder
¼ cup milk

Cream shortening, salt, soda, cocoa and sugar. Add beaten egg and mix well. Sift flour with baking powder. Add to first mixture alternately with milk, blending thoroughly. Chill dough. Roll thin on floured board and cut with small cookie cutter. Place on greased cookie sheets and bake in moderate oven (350° F.) 6-8, minutes. Cool, then put two cookies together with mint filling.

MINT FILLING: Mix 2 cups sifted confectioners' sugar with ¼ cup cream, 1/8 teaspoon salt and ¼ teaspoon peppermint extract.
