Cauliflower
with Cheese Sauce
| 1 medium sized cauliflower
2 cups milk 4 tablespoons butter 4 tablespoons flour 1½ cups grated cheese ½ teaspoon salt Cook the cauliflower upside down in boiling
salted water until tender, 12 to 15 minutes. Drain. Make a white sauce
by melting butter and adding flour. Add milk gradually. Cook slowly until
thickened, stirring constantly. When thickened, remove from heat and add
grated cheese and salt. Place the drained cauliflower on a platter and
pour the cheese sauce over it.
