Caramel
Banana Pie
| 1 cup dark brown sugar
1/3 cup flour 1/8 teaspoon salt 2 egg yolks, beaten 2 cups milk 1 teaspoon vanilla 1½ cups sliced bananas Baked pastry shell Blend sugar, flour and salt. Add egg yolks
and milk and cook in double boiler until thick and creamy, stirring constantly.
Continue cooking for five minutes, then remove from heat and cool. Add
vanilla and bananas. Pour into baked shell and cover with meringue made
by beating 2 egg whites very stiff, then adding 4 tablespoons sugar gradually.
Bake at 350° F., until lightly brown.
