Buttermilk
Crumb Coffee Cake
| ¾ c. sugar
1 egg ¼ c. shortening ½ c. milk 1 tsp. vanilla 2 c. flour ½ tsp. salt 2 tsp. baking powder 2 c. blueberries ½ tsp. cinnamon 2/3 c. flour ¼ c. melted margarine ½ c. sugar Cream ¾ cup sugar, egg and ¼
cup shortening together in large bowl. Add milk and vanilla and mix together.
Sift 2 c. flour, baking powder and salt together. Add the dry ingredients
to the creamed mixture. Fold in washed and cleaned blueberries. Spread
in a greased and floured 9 x 9 inch pan. Mix ½ c. sugar, cinnamon,
2/3 c. flour and ¼ cup melted margarine together into pea sized
crumbs. Sprinkle crumb topping over batter in pan. Bake at
350° for 45 to 50 minutes.
