Brown
Sugar Cake
| ½ cup butter or margarine
¾ cup brown sugar 1 egg, unbeaten 2 cups cake flour 1 cup cooked raisins 2 teaspoons baking powder ¼ teaspoon baking soda 2 teaspoon salt 1 teaspoon cinnamon 1 teaspoon nutmeg 1 teaspoon cloves 1 cup milk 1 teaspoon vanilla Cream shortening until fluffy, then add brown sugar and cream together. Add beaten egg. Sift flour once and measure. Remove 2 tablespoons and dust over raisins. Sift remaining flour, baking powder, soda, salt and spices. Add dry ingredients to sugar mixture alternately with milk. Blend thoroughly and add flavoring. Stir in raisins. Pour batter into greased and floured flat pan (8x8x2) and sprinkle with crumb topping. Bake in moderate oven (375° F.) 35 minutes. CRUMB TOPPING: Sift together ½ cup
cake flour, ½ teaspoon cinnamon and ¼ cup brown sugar. With
pastry blender cut in 2 tablespoons butter until consistency of fine meal..
Sprinkle over batter before baking.
